Hungry Jack Lefse

This isn't just a Lefse recipe; it's a piece of family history! I am delighted to share this cherished recipe, mailed to Grandma Johnson by LeRoy Barsness of Grand Forks, ND, on December 28th, 2000. Lefse holds a special place as a beloved treat in the upper Midwest, and we think recipes with such a wonderful story are even more enjoyable to share.

Ingredients
- 5 1/2 cups boiling water
- 1/2 cup butter
- 6 1/2 cups Hungry Jack Potato Flakes
- 1/4 cup vegetable oil
- 2 tsp salt
- 1/3 cup sugar
Instructions
- Cool, divide into 2 parts
- Add 1 cup of flour to each part
- Use about 1/4 to 1/3 cup of dough for each lefse
- Roll on floured board
- Fry on a Lefse Griddle
