Szechuan Beef Noodles

Ingredients
Beef & Marinade
- 3 thin ribeye slices, sliced into thin strips across the grain
- 1 tbsp soy sauce
- 1 tsp cornstarch
- ½ tsp dark sesame oil
Noodles & Veggies
- 8–10 oz dry wheat noodles, ramen, or udon
- 2 cups sliced vegetables (bell peppers, shredded cabbage, or bok choy)
- 3 green onions, chopped
Szechuan Sauce
- 4 tbsp soy sauce
- 2 tbsp chili oil or chili crisp
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 1 tsp Szechuan peppercorn powder (or red pepper flakes)
- 4 tbsp water
Instructions
Marinate & Mix (10 mins)
- Toss thin ribeye strips in 1 tbsp soy sauce, cornstarch, and sesame oil; set aside. In a small bowl, whisk all sauce ingredients until sugar dissolves.
Boil Noodles
- Cook noodles until just al dente. Drain, rinse with cool water to stop cooking, and toss with a drop of sesame oil to prevent sticking.
Flash-Sear Beef (High heat)
- Heat 1 tbsp cooking oil in a skillet or wok over high heat until shimmering. Add beef in a single layer and sear undisturbed for 60 seconds. Stir briefly, then transfer immediately to a plate.
Stir-Fry Veggies
- In the same pan, stir-fry vegetables for 2 minutes until tender-crisp. Pour in sauce mixture and simmer for 30 seconds to thicken slightly.
Combine & Serve
- Toss cooked noodles and reserved beef into the pan. Coat evenly over medium heat for 1 minute until heated through. Garnish with green onions.
