Diablo Sauce

Ingredients

  1. Wash/rinse habaneros in colander
  2. Dice onions, 2" diced. Then combine with vegetable oil, garlic cloves and habaneros, sauté until toasted brown and fully caramelized.
  3. Add tomato sauce, white wine vinegar and salt to the caramelized mixture.
  4. Simmer all ingredients for 15 minutes, stirring constantly. The sauce should thicken as it simmers
  5. Once sauce is cooked, blend with stick blender until sauce if very smooth. Sauce will change color and have a semi-orange color depending on the color of habaneros.
  6. Pour prepared diablo sauce in jars.
  7. Use your favorite canning method to seal the jars. My favorite method is to seal them tight, put them in boiling water for 10 minutes. Remove them from the water and cover them with a towel overnight. They will seal by the next morning.
